Peanut butter homemade vegan protein

Peanut butter is a wonderful plant-based source of protein and other goodies. Once you try this peanut butter you will be a convert to the homemade version. The natural oils are delicious when fresh and you can control the texture.

Ingredients
200 g salted roasted peanuts
200 g unsalted roasted peanuts
Method
  1. 1Place all nuts in a food processor and blitz for about 3 minutes (you may need to scrape the sides down half way through)
  2. 2Meanwhile, sterilise a clean jar by wetting the inside of the jar (you don’t need to fill it with water) and placing it in the microwave for 90 seconds, or until dry
  3. 3When you think the peanut butter is done in the food processor, blitz it for another minute so it releases all the yummy oils
  4. 4Refrigerate and enjoy on toast, in smoothies, with a slice of apple or spoon!

Notes & tips

If you prefer unsalted peanut butter, replace the salted peanuts with unsalted. Roasted nuts are now widely available and give a delicious taste. If you can’t find them, you can roast nuts on a heavy dry pan for a few minutes, shaking often.

 

If you prefer a runnier peanut butter or your food processor needs some help, had a tablespoon of peanut oil one at a time until the desired consistency is achieved.
