Peanut butter is a wonderful plant-based source of protein and other goodies. Once you try this peanut butter you will be a convert to the homemade version. The natural oils are delicious when fresh and you can control the texture.
Ingredients
200 g
salted roasted peanuts
200 g
unsalted roasted peanuts
Method
- 1Place all nuts in a food processor and blitz for about 3 minutes (you may need to scrape the sides down half way through)
- 2Meanwhile, sterilise a clean jar by wetting the inside of the jar (you don’t need to fill it with water) and placing it in the microwave for 90 seconds, or until dry
- 3When you think the peanut butter is done in the food processor, blitz it for another minute so it releases all the yummy oils
- 4Refrigerate and enjoy on toast, in smoothies, with a slice of apple or spoon!

Notes & tips
If you prefer unsalted peanut butter, replace the salted peanuts with unsalted. Roasted nuts are now widely available and give a delicious taste. If you can’t find them, you can roast nuts on a heavy dry pan for a few minutes, shaking often.
If you prefer a runnier peanut butter or your food processor needs some help, had a tablespoon of peanut oil one at a time until the desired consistency is achieved.
