The hemp seeds and walnut oil in this salad take it to the next level - they're high in omega 3 fats (so good for heart health) and they’re super tasty! If you’re short on time, try putting the broccoli and almonds through the food processor.
Ingredients
¾ broccoli
¼ red onion
1½ handfuls
almonds
2 handfuls
dried cranberries
1½ handfuls
pecans
2 tbsp
hemp seeds
4 tbsp
walnut oil
1 tsp
mild English mustard
(or Dijon mustard)
1 tbsp
honey
(or maple syrup for vegan option)
1 clove
garlic
¼ tsp
salt
½ lemon
Method
- 1Finely chop broccoli, onion and almonds
- 2Place them in a bowl with the cranberries, pecans and hemp seeds
- 3Combine walnut oil, mustard, honey (or maple syrup), garlic, salt and juice from the lemon in a jar with a tightly fitting lid. Shake until combined and emulsified
- 4Pour dressing over the salad and toss to ensure all ingredients are evenly covered
- 5Enjoy!
Seasonality
All year round. The variety of broccoli sold in the shops is now able to be grown all year round. If you’re growing your own, you will know that they are usually only in season in winter in Western Australia.
Notes & tips
For the vegan option, use maple syrup instead of honey in the walnut mustard dressing.
