Raw broccoli is excellent for gut health.
The hemp seeds and walnut oil in this salad take it to the next level - they're high in omega 3 fats (so great for heart health) and really tasty.
If you’re short on time, try putting the broccoli and almonds through the food processor.
Ingredients
¾ broccoli
¼ red onion
1½ handfuls
almonds
2 handfuls
dried cranberries
1½ handfuls
pecans
2 tbsp
hemp seeds
4 tbsp
walnut oil
1 tsp
mild English mustard
(or Dijon mustard)
1 tbsp
honey
(or maple syrup for vegan option)
1 clove
garlic
¼ tsp
salt
½ lemon
Method
- 1Finely chop the broccoli (the florets and stalk), red onion and almonds
- 2Place them in a bowl with the cranberries, pecans and hemp seeds
- 3Combine walnut oil, mustard, honey (or maple syrup), garlic, salt and juice from the lemon in a jar with a tightly fitting lid. Shake well until combined
- 4Pour dressing over the salad and toss to ensure all ingredients are evenly covered, and enjoy!
Seasonality
All year round. The variety of broccoli sold in the shops is now able to be grown all year round.
If you grow your own, they grow best in winter in many Australian states.
Notes & tips
For the purely plant-based option, use maple syrup instead of honey in the walnut mustard dressing.
