This is a great breakfast option for people in a hurry. It can all be prepared days before and eaten on the go. The chia seed pudding keeps for 4 days in the fridge. Top with other ingredients on the morning of serving.
Ingredients
6 tbsp
chia seeds
1¼ cups
plant based milk
(or cow's milk)
2 tsp
honey
(or maple syrup)
½ tsp
cinnamon
12 tbsp
greek yoghurt
(or plant-based yoghurt)
12 tbsp
berry compote
(see recipe here)
Method
- 1In a medium glass jar add chia seeds, milk, honey (or maple syrup) and cinnamon
- 2Place the lid tightly on the jar and shake well to combine
- 3Refrigerate overnight
- 4In a small jar or pot, layer desired amount of chia seed pudding with yoghurt and berry compote - enjoy!
